heirloom tomato caprese salad

Is this a boring recipe? Maybe. We tried to stuff around with it, to be more clever and interesting. We thought about tomato granitas and different kinds of cheeses. Tried a basil sorbet with disastrous results. Think sweet and sour spinach ice cream without the cream.

So lesson learned: some things you just shouldn’t fuck with. This is one of them.


(salad for 3 or 4)

mix of small and large heirloom tomatoes, about 10-12 in total
1 buffalo mozzarella, or burrata* if you like
half bunch basil
extra virgin olive oil
balsamic vinegar, minimum 4-leaf (optional)
salt and pepper to taste

*burrata is essentially a mozzarella stuffed with cream that remains liquid inside. Once opened, it must be eaten immediately – because the cream escapes, there’s no putting it back in the box. Serve the caprese with the burrata intact and cut it open on the plate so the cream becomes part of the dressing.

    1. hey chris, we’ve had some luck with paesanella burrata at supabarn in the city. if you can’t find it, their buffalo mozzarella is one of the better ones we’ve tried. we’ll also follow up with the mart deli at fyshwick markets – they’ve been pretty good with special orders. we’ll let you know…
