grilled asparagus // lardo

So we’re desperately holding on to summer, madly making sharing plates that take like five minutes to chuck together. If you haven’t already read about our obsession with lardo, check it out here. Today’s post gives you another option and you can’t even imagine what lardo does to asparagus.



10-15 slices of lardo, thinly thinly sliced
bunch of fresh asparagus

Wrap a couple of spears in one or two slices of lardo and grill under a hot grill for around 5 minutes, or until crispyish. Be careful not to overcook the asparagus. You can also do this in an oven preheated to about 180° celsius. That’s it.

Oh, and lardo is pretty resilient – you’d think it would do that crazy sticky then super dry and cracker-ish thing that prosciutto does when you cook it. But it doesn’t.
